Gina Giovannini Vargas and Ruben Vargas celebrated their commitment to the each other at The Palace in September. Gina was especially pleased with the level of service The Palace staff provided to help make her big day unforgettable. “My husband requested if it was possible to set up Rodizio style during our cocktail hour,” said Gina. “What was so wonderful was The Palace had never done it before and fulfilled our request with passing around four different meats during cocktail hour, which meant passing around meats just like in the Spanish restaurants. Justin conquers the Spartan Race

He runs a tight ship, carefully chooses ingredients, and at any given moment the Palace kitchen appears orderly—a rare feat for any banquet hall kitchen. Many of you may not know that Justin has lost a lot of weight (over 140 pounds) through sheer discipline. Imagine how hard it would be to lose weight when you work around food all day and a major part of your job is to taste it. Not only did Justin become much healthier, he has become super fit. He recently completed the ultra challenging Spartan Race, a three-mile course filled with 15 obstacles from rope climbs to tire flipping to crawling under barbed wire. Daytop Honors Gov. Christie at The Palace

Last week, The Palace at Somerset Park served as the setting for an incredible moment where former crack addict Craig Hanlon, now an attorney, personally thanked New Jersey Governor Chris Christie, then the state’s Attorney General, for offering Hanlon a summer internship — an opportunity that changed his life. Hanlon was the surprise guest of the evening and Christie was clearly moved by the gratitude. “It was clear that I wasn’t the only one doing him a favor,” said Christie. “He was doing me one. This young man will show others what overcoming challenges is all about.” The event honoring the Governor was held by Daytop Village, a residential treatment program in Mendham that receives funding from the state. Chef Justin cooks at the James Beard House

The Palace’s Director of Food & Beverage Justin DiBianca (pictured at center) worked alongside chef’s Fabio Viviani (former “Top Chef” contestant) andDavid Blonsky at the James Beard House in Manhattan on August 19. The dinner was for the well-known chefs’ restaurant Siena Tavern in Chicago. Chef Justin was instrumental in preparing a “Modern Mediterranean”-themed dinner for the highest circle of food experts. The non-profit James Beard Foundation is the top organization for the advancement of the culinary arts. Some highlights of the menu included Wagyu Beef Tartare with Marinated Pecorino, Spiced Peach Mostarda and Crispy Potatoes; Hamachi Crudo with Serrano Chiles, Spicy Balsamic, Native Forest Honey, Shaved Summer Truffles and Crispy Shallots; and a Dessert Duo of Bomboloni with Whisky Caramel and Raspberry Chianti and Warm Chocolate Butter Cake with Candied Hazelnuts and Hazelnut Gelato.  “It was a great honor to be invited to cook alongside these great chefs,” … Read more

Palace bartender state finalist for Miss New Jersey USA pageant

Abbey O’Connor is an important part of our team here at The Palace as a bartender. When she’s not providing an important service to our guests, Abbey is preparing to compete for the title of 2014 Miss New Jersey USA. The winner of the state-level competition qualifies for the Miss USA pageant. Donald Trump and NBC own the pageant system. But before any of that can happen, Abbey needs to raise $1195 to cover her costs to compete in the state competition, which takes place on Oct. 18-20 in Parsippany, New Jersey. She needs the funds for the stay at the host hotel, meals, production costs of the pageant, the photo publication for the official program, and other expenditures related to the marketing of the pageant.  “As for me bursting onto the pageant scene, my mom used to do it when she … Read more
