The Palace’s Director of Food & Beverage Justin DiBianca (pictured at center) worked alongside chef’s Fabio Viviani (former “Top Chef” contestant) andDavid Blonsky at the James Beard House in Manhattan on August 19. The dinner was for the well-known chefs’ restaurant Siena Tavern in Chicago. Chef Justin was instrumental in preparing a “Modern Mediterranean”-themed dinner for the highest circle of food experts. The non-profit James Beard Foundation is the top organization for the advancement of the culinary arts.
Some highlights of the menu included Wagyu Beef Tartare with Marinated Pecorino, Spiced Peach Mostarda and Crispy Potatoes; Hamachi Crudo with Serrano Chiles, Spicy Balsamic, Native Forest Honey, Shaved Summer Truffles and Crispy Shallots; and a Dessert Duo of Bomboloni with Whisky Caramel and Raspberry Chianti and Warm Chocolate Butter Cake with Candied Hazelnuts and Hazelnut Gelato.
“It was a great honor to be invited to cook alongside these great chefs,” said Justin. “To have prepared a meal for the guests of the distinguished James Beard Foundation has to be one of my top career highlights.”
